I don't eat a lot of meat either, but for me its a matter of not having enough time too, or wanting to cook. I eat a LOT of eggs. Just tonight I hard boiled 8 for snacks during the week, but more often I'll fry up one whole and one egg white. Carbs are my killer too and recently I've cut them out. I still indulge every once in a while (tonight I had a sub) but making the conscious effort to cut them out forced me to come up with new options, like using carrots in a stir fry instead of rice or a leaf of lettuce instead of bread in a sandwich. I think as long as you're eating well, making clean choices and following your doctors advice you're doing perfect.
