Mmmmm mmmmm good!

Its not often I try a new to me recipe on a weeknight but this was so easy and fits so perfectly with my rushed Monday nights. I'm so thrilled with how it turned out in execution and taste. Last Friday night I went with my running room girls - Leigh and Bev - to a local cafe/restaurant, The Bean Bar in Hamilton and Leigh recommended a dish she had tried before, Greek Chicken. Basically it was a chicken breast marinated in lemon, garlic, herbs and grilled and was served with roasted potatoes (but we subbed asparagus) and a salad of green, yellow and red peppers, cucumbers, onions,olives,  feta and a really great lemony dressing.

Sunday is my normal food prep day and Mondays are really, really long days for me so I wasn't sure how this was going to work, cooking on a Monday around 830-900 when getting back from my Running Clinic, but I figured it was worth a shot. I bought some boneless chicken  breasts and marinated them with lemon juice, basil, oregano, thyme, garlic and  olive oil over night. I also  roasted some sweet potatoes to have along with it. Tonight I opened the container with the chicken and the smell was heavenly. It smelled good enough to eat raw!  I grilled them on an electric grill and finished them in the oven for about 10 minutes. We had it with the roasted sweet potatoes that I sauteed with the same spices just until heated through again and some grilled asparagus. Oh so good! Best part, I made enough to have leftovers for mine and Liam's lunch tomorrow. It took less than 5 minutes to throw it together last night, about 10 min to prep the sweet potatoes and about 40 min in the oven, turning them twice and then about 30 minutes tonight to throw the meal together. Not bad for my latest night of the week.

No shin splints for four runs! Woohoo. Admittedly, yesterday I ran at a very, very, very slow pace (even by my standards), partly because I was tired and  partly because we were doing 5K and I wanted to make it all the way without problems. I ended running at 5.1K and no problems. 4.2K tonight at my normal pace and  no problems!  Tonight I also did three bouts of 30-45 seconds of sprinting and I felt pretty good.  Yesterday I was just not "feeling" running, I felt bored of it, not enthused and couldn't understand why I got out of bed so early to do something I don't even enjoy. But tonight was better, the sprinting made it more interesting to me and I could see that if I practiced that more, I might, just might be able to go faster.  I can't say I'm gonna love every run from here on out, but I think my mindset changed just a little tonight.

  4. yay for no shin splints, thats great news Enz :0) Greek chicken sounds delish!! Our menu for tonight is actually greek quesadillas .. reading this post makes me want them even more so!!
