15 Week Challenge - Week 1 - Recipe Makeover

This is my alternative to pub nachos and is easy to make and delicious! The whole recipe is 7 WW points based on the ingredients I used, your points may be slightly different depending on specific ingredients (but should be close). This is enough for a satisfying dinner or big enough to share as an appetizer for two.

2 low fat 6” corn tortillas
100 g low fat ground turkey
30 g low fat cheese, grated
½ cup fat free salsa
¼ cup chopped red onions
Non fat cooking spray

  1. Preheat oven to 400F.
  2. Spray a cookie sheet with non stick spray.
  3. Spray each side of tortilla with the non stick spray.
  4. Cut tortillas into 8 wedges each.
  5. Place tortillas in single layer on cookie sheet.
  6. Cook in heated oven for about 5-8 minutes, turning once halfway through (watch them carefully as they go from crisp to burnt very quickly!).
  7. Leave wedges on the cookie tray to cool completely.
  8. Turn oven down to 350F.
  9. Cook turkey with your favourite seasonings ( I used salt, pepper and chili powder) until done.
  10. Stir in ½ cup of salsa.
  11. Arrange cooled tortilla wedges on cookie tray so they are close together and some slightly overlap.
  12. Spoon turkey/salsa over tortilla wedges evenly.
  13. Sprinkle with chopped onions.
  14. Sprinkle with grated cheese.
  15. Bake in oven until cheese is melted.
  16. Eat!!
